Barbecue is a sumptuous dish for any occasion. It may be a birthday, a christening, or even a wedding. It’s also one of the top choices for a party dish and is also perfect for picnics. You can also prepare it for your family even without a special occasion. Here are some great chicken BBQ recipes that you can try:
THAI CHICKEN BBQ
16 ounces chicken meat cut into cubes
1 tsp. of salt
1 tbsp. ginger chopped
1 garlic clove minced
2tbsp. of curry powder
1 tbsp. cooking wine
¼ cup soy sauce
1 tbsp. of honey
1 small can of pineapple chunks
1 red bell pepper, cubed
1 green bell pepper, cubed
½ cup coconut milk
1 tbsp. Tabasco sauce
Mix the following together: cooking wine, soy sauce, coconut milk, Tabasco sauce, salt, ginger, garlic, and curry powder. Divide the sauce in half. One is for marinating and the other one for dipping. Refrigerate the dipping sauce.
Then put pineapple chunks, green bell pepper, red bell pepper, and chicken meat into the marinating mix. Put it in the refrigerator overnight.
After marinating place on a skewer alternately: green bell pepper, red bell pepper, pineapple chunk, and chicken. Grill until done.
Heat the dipping sauce until it simmers. Serve the barbecue with the dipping sauce.
CRACK CHICKEN BBQ
1 pound boneless chicken breasts, pounded into ¼ inch thick
2 cups of water
¼ cup brown sugar
2 tbsp. salt
Ground black pepper
1 cup barbecue sauce
Juice from 2 pcs. Of limes
2 cloves of garlic, minced
Place the chicken in a large Ziploc bag and pound until ¼ inch thick.
In a large mixing bowl, mix water, salt, and sugar together. Pour the mixture into the Ziploc and refrigerate for 15 minutes to 2 hours.
Remove the chicken and discard the marinade sauce.
Set grill over medium heat. Place the chicken and season with salt on each side. Grill 6 minutes each side.
In a bowl, mix barbecue sauce, lime juice, and garlic together. Baste chicken, and flip it occasionally until it caramelized and cooked.
CHICKEN AND BACON BBQ
2 cups ranch dressing
Juice from ½ lemon
Ground black pepper
1 pound chicken breasts, cut into 1 inch chunks
16 slices of bacon
1 cup cherry tomatoes
Set grill over medium heat. In a bowl, mix 1cup ranch sauce, lemon juice, and cayenne. Add salt and pepper to taste. Coat the chicken with the sauce.
Prepare skewers: start with bacon, a piece of chicken, wave bacon back into the skewer, add cherry tomato, and then weave bacon back. Repeat the process and use 2 pieces of bacon per skewer. Season skewers with salt and pepper.
Place a piece of foil on the grill and place the skewers. Turn on each side until chicken is brown and bacon is crispy. Cook at least 8 minutes each side. Drizzle with the remaining cup of ranch and garnish with chives.
